Carrot Raisin Salad
Carrots are nutritional heroes as they store a gold mine of nutrients. Raisins are low in fat and sodium, but high in carbohydrates for a quick pick-me-up snack.
Ingredients:
4 medium peeled and grated carrots
1/4 cup raisins
2 teaspoons sugar
Juice of one lemon
Directions:
In a medium bowl, thoroughly mix carrots, raisins, sugar and lemon juice.
Serve chilled.
