Hot Cornmeal Cereal

A little cornmeal cornmeal goes a long way: 1 cup of dry cornmeal yields 4 cups cooked. Store cornmeal in a cool, dry place in an airtight container. Most cornmeal will keep this way for up to one year.

Ingredients:
1 cup cornmeal
1 teaspoon salt
1 cup cold water
3 cups boiling water

Directions:

Mix the cornmeal, salt and cold water.

Pour into the boiling water, stirring occasionally. Cook until thickened, stirring often.

Cover and cook over low heat about 15 minutes.

Serve hot with milk and sugar.
