Garden Salad

Broccoli florets have about eight times as much beta carotene as the stalks. Refrigeration will help retain the vitamin A and C content of your broccoli. Source: Broccoli Food Facts

Ingredients:
1 1/2 cups coarsely chopped broccoli florets
1/2 cup grated carrots
1/2 cup coarsely chopped cauliflower
1/2 cup chopped, cored and diced, not peeled, apple
1/4 cup sliced green onion
1/2 cup yogurt, nonfat vanilla
1/4 cup chopped peanuts, unsalted, dry-roasted

Directions:

  1. Wash your hands and work area.
  2. Mix all ingredients together in serving bowl.
  3. Cover and refrigerate for 2 hours or longer to allow flavors to blend. Serve cold.
  4. Cover and refrigerate leftovers within 2 hours.
