Lasagna Roll-Ups

Lasagna appeals to the eye as well as the taste buds. Making lasagna a day ahead and refrigerating overnight allows the spices to meld and give exceptional flavor.

Ingredients:
4 ounces (1/2 cup) shredded Mozzeralla
15 ounces ricotta cheese
1/2 cup frozen spinach, thawed and drained
Salt and pepper to taste
Pinch of basil
Pinch of parsley
Pinch of nutmeg
12 lasagna noodles, cooked
16 ounces traditional pasta sauce
Basil for garnish
Grated cheese

Directions:

  1. In a medium mixing bowl, combine cheese and spinach; season with salt and pepper. Add basil, parsley and nutmeg, blend well.
  2. Lay lasagna noodle flat on a cutting board. Place 2 tablespoons of the cheese mixture on the end closest to you. Carefully roll half way, flatten a little with a gentle pat and then continue to roll to the end. Repeat this with the remainder of the cheese mixture and pasta.
  3. Heat pasta sauce, either on stove top or in microwave. Place 3 rolls at a time in a microwave-safe dish; cover and microwave on high for 1-1/2 minutes. Repeat with remainder of rolls.
  4. Pour hot pasta sauce over each roll. Garnish with parsley and sprinkle with cheese.

Feeds a family of 4 for under $10.00.

Recipe yields 4 to 6 servings.
