Potato Soup
Use a vegetable peeler to peel potatoes. Sprinkle raw potatoes with lemon juice or apple juice to keep them from browning. Store potatoes in a dark cool place to keep them from turning green.
Ingredients:
3/4 cup onion (1 medium) chopped
4-1/2 cup potatoes, peeled and diced
1 tablespoon butter
3 tablespoons flour
1 quart whole milk
Directions:
- Place onions and potatoes in sauce pan. Cover with water and bring to boil. Simmer until soft, about 10 minutes. Drain.
- Melt margarine in saucepan. Add flour and stir until smooth. Heat to thicken.
- Add onions and potatoes to milk mixture, and heat to serving temperature.
Preparation time: 25 minutes
Cooking time: 15 minutes
4 Servings, about 1 cup each, plus 4 servings for another meal
