Shoestring Potatoes
Potatoes should have good rich color and have few eyes. They should be firm, smooth and clean. Use a vegetable peeler to peel potatoes. Store potatoes in a dark cool place to keep them from turning green.
Ingredients:
1-1/2 pound potatoes
3 tablespoons vegetable oil
1/4 teaspoon salt
1/4 teaspoon pepper
Directions:
- Preheat oven to 450 degrees.
- Wash potatoes; cut lengthwise into thin strips.
- Combine remaining ingredients in plastic bag. Put potatoes in bag; seal; shake to coat potatoes.
- Arrange potatoes in single layer on baking sheet.
- Bake until crisp and golden, about 30 minutes.
