Spaghetti with Tuna and Spinach

No matter what type of diet you follow, tuna is an inexpensive and easy to prepare source of important nutrients. Tuna is high in protein and low in fat and calories when compared with other proteins.

A Penny-Pincher!

Ingredients and Instructions:
Cook 12-ounces spaghetti according to package directions, but omit salt and oil; drain.

In a large non-stick skillet, heat 1-tablespoon olive oil over medium heat.

Cook the following ingredients for five minutes or until softened:

  1. 2-cups sliced onion
  2. 4 minced garlic cloves
  3. 1/2-teaspoon red pepper flakes

Add one 14-1/2-ounce can chopped tomatoes and cook five more minutes.

Gradually add 5-cups chopped fresh spinach. Cook five minutes or until spinach is tender.

Add one 6-ounce can drained and flaked albacore tuna. Season with salt and pepper to taste. Toss mixture with spaghetti and serve with freshly grated Parmesan cheese, if desired.

Serving Suggestions: Serve with a green salad and garlic bread. Serve pineapple sherbet for dessert.
